Elevating Shaoxing cuisine through Asian Games
With just 30 days left until the commencement of the Hangzhou Asian Games, the Shaoxing Cuisine Research Society hosted a seminar in Xinchang county on Aug 24.
Regional gastronomy stands as a pillar of local tourism, with countless specialties like hotpot fueling Chongqing's fame and local cuisines igniting fervent cultural and tourism consumption trends.
However, in Shaoxing, the rich culinary culture is dispersed across various regions, scattered and lacking a coherent identity. Regrettably, many iconic local dishes are gradually being forgotten.
Zhang Liang, president of the Shaoxing Cuisine Research Association, said that due to the influx of diverse external culinary styles into Shaoxing, the continuous blending of dining cultures, and insufficient promotional efforts, Shaoxing dishes find themselves on the verge of marginalization.
"In 2017, we established the Xinchang Stir-Fried Rice Cake Association with the intention of propelling the comprehensive development of Xinchang snacks," said Lyu Yueguo, president of the Xinchang Snacks Association.
Mao Tianyao, an inheritor of Shaoxing’s culinary heritage, noted that Xinchang dishes have been building up popularity among young people. The county's promotional techniques offer valuable lessons.
