Shaoxing rice wine
Shaoxing rice wine is a favorite wine in southern China for its soft taste and fragrant flavor. As winter begins, it comes to the best season of a year for brewing rice wine in Shaoxing, east China's Zhejiang Province. With a history of more than 2,500 years, Shaoxing rice wine is still produced with traditional method of brewing, which was listed as a national intangible cultural heritage in 2006.
Wu Huiliang is a master rice wine producer in his hometown Shaoxing, thanks to his knowhow and brewing skills passed down several hundreds of years from his ancestors. He is skillful in the whole procedures of rice wine making from rice planting, rice steaming to rice fermenting in jars, jar sealing and timeliness of sealed jar opening. Today, his son Wu Xinggang has inherited his father's wine-making skills and founded a rice wine workshop.
