Wenzhou chao fen gan, or Wenzhou fried rice noodles, is a traditional dish in Wenzhou. The rice noodle is usually cooked with lean meat, mushrooms, eggs, and scallions. Locals always eat it with a wide variety of toppings, such as dried shrimp, squid, and eel.
The snack is chewy, elastic and refreshing in taste and has a special flavor with seafood toppings.
The most famous Wenzhou chao fen gan can be found in Dajing town in Yueqing city and Wushizhang village in Pingyang county. The former is cooked with about 10 seasonings, including oyster, dried eel, shrimp, fried eggs, celery, and pork, while the latter is stir-fried with lard, shredded cabbage, scallion, shredded carrot, and egg.
A plate of chao fen gan with a bowl of beef offal soup is a great combination.
