Fish hot pot is a very popular dish in Qingyuan county -- administered by Lishui city in East China's Zhejiang province -- as many satisfied diners can regularly attest.
The hot pot uses carp raised in the alpine paddy fields on Baishanzu Mountain, which have bright scales and a tender taste, as well as wild mushrooms that grow in the region.
It is said that the carp meat contains essential amino acids, minerals, vitamin A and vitamin D.
