Quzhou Gangjiang: A delicious sauce for rice

Quzhou people love sauce for its salty and savory flavor. They created Quzhou Gangjiang, a special dish with a sauce-red color, rich aroma, and spicy taste. It goes well with rice and steamed corn bread, making it a popular snack in Quzhou.
Quzhou people usually use pork belly, dried tofu, water bamboo or bamboo shoots, chili, ginger, garlic and soybean paste to make the dish. Some also add orange peel, a local specialty.
The dish is made by frying ginger, garlic and soybean sauce in rapeseed oil, then adding other diced ingredients and seasoning.
Quzhou Gangjiang can be eaten with rice, noodles, bread or steamed buns.
